The ketchup Production Line, Upon the arrival of fresh tomatoes, often transported by large trucks, manual unloading can be a labor-intensive task. To tackle this challenge, we have developed a discharge platform equipped with water guns designed to efficiently unload tomatoes from trucks and transport them to the processing line. This platform also serves the purpose of pre-washing the fresh tomatoes before the processing commences.
Discharge Platform:
The discharge platform is integrated with water guns for unloading tomatoes efficiently from trucks and conveying them to the processing line. It also facilitates the pre-washing of fresh tomatoes before processing.
Elevator/Conveyor System:
This system plays a crucial role in transferring fresh tomatoes from the exterior of the building to the indoor processing area.
Washing:
Thorough washing of fresh tomatoes is essential before crushing. We utilize a combination of bubble washing and spray washing machines for this task. Additional washing stages can be included for stringent cleaning standards, and techniques like ultrasonic and ozone cleaning can be integrated for enhanced efficacy.
Sorting:
Following the washing process, manual visual inspection allows for the identification and removal of any defective tomatoes.
Crushing:
Operated at 1470 r/min, the crusher ensures complete crushing of fresh tomatoes.
Preheating:
The pre-heater raises the product's temperature post-crushing, typically adjustable between 45°C to 85°C. This step enhances juice extraction rates and safeguards the color and flavor of the final tomato paste.
Pulper and Refiner:
Running at 1470 r/min, these machines employ centrifugal force and screens to refine the product. A double-stage setup with varying screen sizes is commonly used.
Evaporation:
A Forced Circulation Vacuum Evaporator concentrates the tomato paste under vacuum and low temperatures to preserve taste and nutrients, resulting in paste with brix levels of 28-30 and 36-38.
Sterilization:
Tube-in-tube type sterilizers are used to sterilize the tomato paste. The temperature and holding time can be adjusted, typically heating the paste to around 115°C for 30 seconds before rapid cooling to preserve taste and nutrients.
Aseptic Filling:
An aseptic filling machine operates in a closed cycle system with the sterilizer, ensuring an aseptic environment using steam for cavity sterilization.
Storage or Blending:
The processed tomato paste can be stored for further use or directed towards blending processes as required.
