Tomato Paste Making Machine | From Fresh Tomato to Thick Paste in One Line
The Tomato Processing Line is a versatile, multi-product system designed to handle fresh tomatoes and convert them into a range of finished goods including tomato paste, tomato ketchup, tomato juice, peeled tomatoes, and diced tomato products. This modular line is ideal for small to medium-scale processors who need flexibility to serve multiple market segments without investing in separate dedicated lines.
One Raw Material – Multiple Outputs
The core philosophy of this multipurpose tomato processing line is maximum flexibility. The same front-end equipment receives, washes, sorts, and crushes fresh tomatoes. From this common point, the processed tomato mass can be directed to different downstream modules depending on the desired final product. Changeover between product types typically takes less than one hour, allowing a single factory to produce paste for export, juice for domestic beverage brands, and diced tomatoes for food service customers, all within the same shift.
Peeling and Dicing Module for Canned Tomatoes
When producing peeled whole tomatoes or diced tomatoes, the line bypasses the fine pulping stage. Instead, tomatoes undergo steam or lye peeling. A steam peeler subjects tomatoes to high-pressure steam for 15 to 30 seconds, causing the skin to blister. A rotary rubber roller peeler then removes the loosened skin with minimal flesh loss. Peeled tomatoes can be packed whole in juice or sent to a dicing machine for uniform cubes ranging from 5 to 15 millimeters. The dicing module includes a vibratory screen to remove fines and a sorting table for quality control.
Juice Extraction and Clarification
For tomato juice production, the crushed tomatoes pass through a screw-type juice extractor that separates pulp from skins and seeds. The extracted juice can be processed as cloudy juice with suspended solids or clarified using an enzymatic treatment followed by a decanter centrifuge and ultrafiltration. The clarified juice is then deaerated and pasteurized using a plate heat exchanger before aseptic or hot filling into cans, glass bottles, or cartons.
Paste and Sauce Concentration
For paste and sauce production, the line directs the crushed tomatoes to a pulping finisher as described in the earlier versions. A single-effect or multi-effect evaporator concentrates the pulp. A portion of the concentrated paste can be diverted to a blending station where sugar, salt, acidulants, and spices are added to create finished ketchup or barbecue sauce. The same blending station can also prepare pizza sauce, pasta sauce, or tomato salsa by incorporating herbs, garlic, onion powder, and oil.
Control System and Recipe Management
The multipurpose line is controlled by a centralized PLC system with an intuitive touch screen interface. The operator selects the target product from a menu of saved recipes. The system then sets appropriate temperatures, pressures, flow diverting valves, and line speeds automatically. Manual overrides are available for experienced operators who wish to fine-tune parameters. Production data for each batch is recorded and can be exported for quality management systems such as HACCP or BRC.
