Complete Solution for Tomato Paste from Fresh Fruit
Our industrial tomato paste production line transforms fresh, ripe tomatoes into high-quality tomato paste with concentration up to 38°Brix. The line integrates washing, sorting, crushing, pre-heating, pulping, evaporation, sterilization and aseptic filling – all controlled by a centralized PLC system. Designed for 5 to 100 tons of fresh tomatoes per day, this line serves medium to large scale tomato processors worldwide.
Key Processing Stages
Washing & Sorting
Fresh tomatoes enter a bubble washer with high-pressure spray jets to remove soil, leaves and pesticide residues. An automatic sorting conveyor with manual inspection station allows workers to discard unripe or damaged fruits.
Crushing & Pre-heating
A hammer crusher breaks tomatoes into small pieces of 5 to 10 millimeters. The mash is then rapidly heated to 85 to 95 degrees Celsius in a tubular pre-heater. This step inactivates enzymes that would otherwise degrade viscosity and color. Both cold break at 60 to 70 degrees Celsius and hot break at 90 to 95 degrees Celsius configurations are available depending on desired paste viscosity.
Pulping & Refining
A double-stage pulping machine with rasper and refiner separates skins and seeds from the pulp. The first stage screen is 1.0 to 1.5 millimeters. The second stage screen is 0.4 to 0.6 millimeters. The result is smooth tomato puree with less than two percent fiber content.
Evaporation – Falling Film Technology
The core of our line is the falling film evaporator, which removes water under vacuum at 60 to 70 degrees Celsius. Compared to traditional forced circulation evaporators, our design reduces steam consumption by 30 to 40 percent and minimizes thermal damage to color and flavor. Available in single, double or triple effect configuration. Concentration range is from 5°Brix fresh juice up to 28 to 38°Brix paste.
Sterilization & Aseptic Filling
The concentrated paste passes through a scraped surface heat exchanger for UHT sterilization at 105 to 110 degrees Celsius for 15 to 30 seconds. After cooling to 25 to 30 degrees Celsius, the paste is aseptically filled into 200 liter aseptic bags in steel drums, 1000 liter aseptic bag-in-box totes, or 20 to 25 kilogram retail cartons with optional bag.
