Hot-Break vs. Cold-Break Processing — This is perhaps the most important decision in tomato paste production. Hot-break processing, where tomatoes are heated to 85–90°C immediately after crushing, inactivates pectin-degrading enzymes, resulting in higher viscosity paste ideal for ketchup and sauces. Cold-break processing minimizes heat exposure, preserving fresher flavor profiles suitable for premium tomato juices. Your choice depends entirely on your end-product specifications.
Multi-Effect Vacuum Concentration — Modern lines employ double-effect or triple-effect falling film evaporators that operate under vacuum conditions. This keeps evaporation temperatures below 70°C in the first effect, protecting heat-sensitive pigments (lycopene) and volatile flavor compounds. With tomato raw juice requiring concentration by nearly sixfold to reach 28–38% solid content, energy efficiency in this stage directly impacts your production cost per ton.
Aseptic Filling & Packaging Versatility — The final product can be packed into 5L to 220L aseptic bags, tinplate cans, glass jars, PET bottles, or Bag-in-Box formats, depending on your target market and distribution channels. The filling temperature is maintained at 90–95°C in a sterile environment to prevent recontamination.
